Wine was already aged in eggshaped amphorae in ancient times. In recent years, fermentation has been tested in various forms in viticulture. Speidel has now developed a stainless steel fermenter that combines the advantages of the egg shape with the advantages of a stainless steel tank and a unique design. The Black Eye looks like a space satellite from the outside and provides a gentle and well controllable fermentation inside. Due to its unique shape, the yeast can circulate smoothly during the fermentation phase. In science it is assumed that this free circulation is an advantage for the fermentation process and thus for the entire aroma spectrum. In contrast to a concrete fermentation barrel, the Black Eye guarantees the necessary hygiene. Thanks to the perfect welding seams and the highly smooth inner walls, the fermenting chamber is also very easy to clean.

The Fermentation Egg is perfect for the fermentation of wine, beer and cider. It is made of food safe polyethylene. The smooth inner surface is very easy to clean.

The idea of fermentation, or ageing, in the egg shaped vessel relates back to ancient methods but with new materials. Since ancient times, beer has been placed for resting into egg-formed amphoras. Saury Bourgogne is an impressive Burgundian barrel offering a perfect balance of fine toast aromatics and textural finesse. Crafted exclusively with 3 year seasoned wood from a blend of centre of France forests and toasted using a large traditional Burgundy brazier, giving two very distinctive toast levels to match with your Chardonnay, Pinot Noir, Shiraz or Syrah and other wine styles as you prefer.
Saury Classic is the original barrel produced by the Saury Cooperage. First crafted in 1873, Saury Classic stays true to its origins and provides the core components that all winemaker’s desire - fruit support, structure and length, with minimal toast influence - maintaining the cooperages original philosophy to “respect le fruits”.
Available in either French or American Oak, using a fine selection of wood from the forests of central France (for French Oak) and the forests of America (for American Oak), with minimum 3 year open-air seasoning at our wood park in Brive, and a choice of traditional fire bending of staves or bending of staves through hot water immersion.
