  • For Premium White Wine Fermentation Wine was aged in egg-shaped amphorae in ancient times. In recent years, fermentation has been tested in various forms in viticulture. Speidel has now developed a stainless steel fermenter that combines the advantages of the egg shape with the advantages of a stainless steel tank with a unique design. The Black Eye looks like a space satellite from the outside and provides a gentle and well controllable fermentation inside. Due to its unique shape, the yeast can circulate smoothly during the fermentation phase. It is assumed that this free circulation is an advantage for the fermentation process and thus for the entire aroma spectrum. In contrast to a concrete fermentation vessel, the Black Eye guarantees the necessary hygiene.   • braumeister-logo Biodynamic fermentation in the egg shape corresponds to the golden ratio without corners and edges. Wine, must and beer can move freely during the fermentation phase and storage. This makes the process gentler and allows the drink to fully develop. The idea of fermentation or maturation in the egg is a return to ancient methods but with new materials. Even in ancient times, alcohol was matured in egg-shaped amphorae. After successful tests with egg-shaped fermentation containers made of concrete for winemaking in recent years, Speidel has now developed the fermentation egg made of food-safe polyethylene. The oxygen permeability of the food-safe plastic allows an even influence of oxygen and thus ensures an ideal process of fermentation and maturation. After fermentation, the smooth inner surface is very easy to clean.

  • Tonnellerie VLAD is a Romanian Cooperage situated in the Transylvanian forest area. Oak is sourced from three forest regions of Romania - Transylvania, Moldovia and Wallachia. VLAD has its own stave mill and wood yard for maturing the oak for 36 months, where it is artisanal crafted with long toasting from one to four hours. All oak from Vlad is from PEFC and FC certified forests. Barrels are crafted in 225L, 228L, 300L, 500L. VLAD 225L is available in thin stave (22mm) or regular stave (27mm). The barrels are of high quality and are competitively priced. Toasting is artisanal – use of incandescent oak embers and slow (two to four hours) low temperature toasting allows the toast to penetrate the staves up to 10mm, and develops refined and subtle oaky notes.
